Special issue information:
Built with covalently linked hexoses and pentoses units, polysaccharides (cellulose, hemicellulose, chitin, starch, and alginate, etc.) are rich with hydroxyl groups, either along the polymer chains or on the surface of nano-polysaccharides. In addition, during isolation and modifications, additional polar groups, such as carboxyls, carboxymethyls, sulfates, phosphates, etc., can also be introduced. These hydroxyl and/or polar groups endow the hydrophilic nature of polysaccharides, rendering strong interactions with water molecules. This thematic special issue aims to highlight recent progress on the polysaccharides-water molecules interactions, and provide new findings on how such interactions affect chemical reactions, assembled structure, processability, and materials design and properties. State-of-art methods for characterization and modeling of polysaccharide-water interactions are also of interest. This Virtual Special Issue (VSI) focuses on reviews and original research articles.

Special issue information:
This Special Issue of Carbohydrate Polymers journal will comprise scientific contributions in the form of review and regular articles from authors who participated to the 9th International Fructan Symposium (IFS2022). The IFS2022 motto is “Fructans for Life”, reflecting our ambition to translate fundamental fructan research into concrete changes towards a better life for the people. Following this motto, this issue will cover both fundamental and applied research on fructans.
